Preparation time: 35 minutes

INGREDIENTS

  • 300g tofu
  • 200g rice noodles
  • 2 cloves of garlic
  • 1 cube of fresh ginger
  • 1 onion
  • ½ red bell pepper
  • A piece of broccoli
  • 1 can of coconut milk
  • Soy sauce
  • 2 tablespoons of peanut butter
  • Juice of ½ lime or lemon
  • Spices: curry, cumin
  • Fresh cilantro
  • 1L vegetable stock or water

PREPARATION

  1. Sauté the garlic, ginger, and onion.
  2. Add the chopped red bell pepper.
  3. Stir in the diced tofu, broccoli, and spices.
  4. Add the remaining ingredients (except the noodles).
  5. Once it comes to a boil, add the noodles.
  6. Serve with a sprinkle of fresh cilantro on top.
