thai soup

Preparation time: 35 minutes
Rations: 3 INGREDIENTS
- 300g tofu
- 200g rice noodles
- 2 cloves of garlic
- 1 cube of fresh ginger
- 1 onion
- ½ red bell pepper
- A piece of broccoli
- 1 can of coconut milk
- Soy sauce
- 2 tablespoons of peanut butter
- Juice of ½ lime or lemon
- Spices: curry, cumin
- Fresh cilantro
- 1L vegetable stock or water
PREPARATION
- Sauté the garlic, ginger, and onion.
- Add the chopped red bell pepper.
- Stir in the diced tofu, broccoli, and spices.
- Add the remaining ingredients (except the noodles).
- Once it comes to a boil, add the noodles.
- Serve with a sprinkle of fresh cilantro on top.
