Noodles with tofu and peanuts

Preparation time: 30 minutes
Rations: 2 INGREDIENTS
- 150-200g rice noodles
- 1 red onion
- ½ green and red bell pepper
- ¼ broccoli
- 1 block of tofu
- Sesame seeds
For the sauce:
- Soy sauce
- 1 tablespoon agave syrup
- 2 tablespoons peanut butter
- 1 cup vegetable broth or water
- Juice of ½ lemon
PREPARATION
- Cook the rice noodles in water and set aside.
- Cut all the vegetables into strips.
- Sauté the vegetables for about 10-15 minutes.
- Add the diced or crumbled tofu.
- Mix all the sauce ingredients. Set aside.
- Add the noodles to the pan along with the prepared sauce and sesame seeds. Mix well.
