Noodles with tofu and peanuts

Noodles with tofu and peanuts

Preparation time: 30 minutes

Rations: 2

INGREDIENTS

  • 150-200g rice noodles
  • 1 red onion
  • ½ green and red bell pepper
  • ¼ broccoli
  • 1 block of tofu
  • Sesame seeds

For the sauce:

  • Soy sauce
  • 1 tablespoon agave syrup
  • 2 tablespoons peanut butter
  • 1 cup vegetable broth or water
  • Juice of ½ lemon

PREPARATION

  1. Cook the rice noodles in water and set aside.
  2. Cut all the vegetables into strips.
  3. Sauté the vegetables for about 10-15 minutes.
  4. Add the diced or crumbled tofu.
  5. Mix all the sauce ingredients. Set aside.
  6. Add the noodles to the pan along with the prepared sauce and sesame seeds. Mix well.
