Lentils with roasted carrots

Preparation time: 35 minutes

Rations: 2

INGREDIENTS

  • 1 can of cooked lentils
  • 4 carrots
  • A few cubes of vegan feta cheese
  • A handful of toasted hazelnuts
  • 1 beetroot

For the sauce: 3 tablespoons of yogurt

  • A few mint or spearmint leaves

PREPARATION

  1. Roast the carrots in the oven with olive oil, salt, and pepper, or cook them in the microwave using a Lekue steamer.
  2. Rinse the lentils and mix with the remaining ingredients.
  3. Add the roasted carrots.
  4. Mix the sauce ingredients and spread it on top. You can substitute this sauce with hummus if you prefer.

*You can substitute the sauce with guacamole or hummus. Juice of ½ lemon, 1 grated garlic clove, finely chopped gherkins, salt
