Lentils with roasted carrots

Preparation time: 35 minutes
Rations: 2 INGREDIENTS
- 1 can of cooked lentils
- 4 carrots
- A few cubes of vegan feta cheese
- A handful of toasted hazelnuts
- 1 beetroot
For the sauce: 3 tablespoons of yogurt
- A few mint or spearmint leaves
PREPARATION
- Roast the carrots in the oven with olive oil, salt, and pepper, or cook them in the microwave using a Lekue steamer.
- Rinse the lentils and mix with the remaining ingredients.
- Add the roasted carrots.
- Mix the sauce ingredients and spread it on top. You can substitute this sauce with hummus if you prefer.
*You can substitute the sauce with guacamole or hummus. Juice of ½ lemon, 1 grated garlic clove, finely chopped gherkins, salt
