Lentil stew with vegetables

Preparation time: 50 minutes

Rations: 4

INGREDIENTS

  • 400g dried lentils
  • 2-3 cloves of garlic
  • 1 onion
  • ½ green and red bell pepper
  • 2 carrots
  • 1 piece of pumpkin
  • ½ zucchini
  • 3 potatoes
  • 100-150g crushed tomatoes
  • Water
  • 1 bay leaf
  • Sweet paprika

PREPARATION

  1. Peel and roughly chop the garlic and sauté.
  2. Add the finely chopped onion and peppers and sauté until tender.
  3. Add the paprika, bay leaf, and after a few minutes, the tomato sauce; let it simmer.
  4. Stir in the remaining roughly chopped vegetables, the peeled and roughly chopped potatoes, and the lentils.
  5. Cover with water, close the pressure cooker, and once it reaches pressure, cook for another 20 minutes.
