Chickpeas with yogurt sauce

Preparation time: 30 minutes

Rations: 3

INGREDIENTS

  • 1 can of chickpeas
  • 1 onion
  • 1 zucchini
  • 100g tomato sauce
  • 1 tablespoon tomato paste
  • Curry and cumin powder

For the yogurt sauce:

  • 1 Greek or plant-based yogurt
  • 1 grated garlic clove
  • Zest and juice of ½ lemon
  • Black pepper
  • 3 tablespoons extra virgin olive oil
  • Salt

PREPARATION

  1. Chop the vegetables and put them in a pan. Sauté until tender.
  2. Add the chickpeas, tomato sauce, tomato paste, and spices. Sauté for a few minutes.
  3. Add half a glass of water and let it cook for a few minutes.
  4. For the sauce, mix all the ingredients.
  5. Serve the chickpeas on a plate and top with the yogurt sauce.
