Bean and mushroom stew

INGREDIENTS

  • 400g dried beans
  • 1 red bell pepper
  • 1 onion
  • 2 cloves of garlic
  • 3 carrots
  • 500g mushrooms
  • 2-3 dried red bell peppers
  • A handful of sun-dried tomatoes
  • (optional)
  • 1 bay leaf
  • Sweet paprika
  • 100g fried or crushed tomato

PREPARATION

  1. Sauté the garlic for a few minutes, then add the onion and red pepper and cook until softened.
  2. Add the paprika and bay leaf, and sauté for a few minutes.
  3. Stir in the tomato sauce and simmer for 5 minutes.
  4. Add the halved mushrooms, the roughly sliced ​​carrots, the beans, the sun-dried tomatoes, and the dried red pepper.
  5. Cover with water, put the pressure cooker lid on, and once it reaches pressure, cook for 25 minutes.
