Spiced baked vegetables

INGREDIENTS

  • 2-3 tomatoes
  • 3-4 carrots
  • 2-3 red onions
  • 1 red bell pepper
  • 4 potatoes
  • 6 cloves of garlic
  • Spices: thyme, rosemary, black pepper

PREPARATION

  1. Cut the potatoes into wedges, the peppers into strips, the onions into quarters, and the carrots in half. Leave the tomatoes and garlic whole.
  2. Line a baking tray with parchment paper and arrange the vegetables on top.
  3. Drizzle with olive oil, sprinkle with salt, and add the spices.
  4. Bake at 180°C (350°F) for 45 minutes to 1 hour.
