Rations: 3 INGREDIENTS
- 200g tofu
- 2 carrots
- 1 leek
- 1 turnip
- ½ zucchini
- Shiitake mushrooms (optional)
- 1 cup of chickpea noodles
- 1 tablespoon of miso
- (optional)
PREPARATION
- Sauté the vegetables in a pot for 10 minutes.
- Add 1.5-2L of water and boil for another 10 minutes.
- Blend everything well until you have a smooth broth.
- Add the diced tofu, mushrooms, and noodles, and cook until the noodles are very soft.
- When it has cooled slightly, add the tablespoon of miso.
- Optionally, serve with Tajín spices.
