Sopa de verduras y tofu

INGREDIENTS

  • 200g tofu
  • 2 carrots
  • 1 leek
  • 1 turnip
  • ½ zucchini
  • Shiitake mushrooms (optional)
  • 1 cup of chickpea noodles
  • 1 tablespoon of miso
  • (optional)

PREPARATION

  1. Sauté the vegetables in a pot for 10 minutes.
  2. Add 1.5-2L of water and boil for another 10 minutes.
  3. Blend everything well until you have a smooth broth.
  4. Add the diced tofu, mushrooms, and noodles, and cook until the noodles are very soft.
  5. When it has cooled slightly, add the tablespoon of miso.
  6. Optionally, serve with Tajín spices.
