Bean and mushroom stew

Preparation time: 45 minutes
Rations: 5 INGREDIENTS
- 400g dried beans
- 1 red bell pepper
- 1 onion
- 2 cloves of garlic
- 3 carrots
- 500g mushrooms
- 2-3 dried red bell peppers
- A handful of sun-dried tomatoes
- (optional)
- 1 bay leaf
- Sweet paprika
- 100g fried or crushed tomato
PREPARATION
- Sauté the garlic for a few minutes, then add the onion and red pepper and cook until softened.
- Add the paprika and bay leaf, and sauté for a few minutes.
- Stir in the tomato sauce and simmer for 5 minutes.
- Add the halved mushrooms, the roughly sliced carrots, the beans, the sun-dried tomatoes, and the dried red pepper.
- Cover with water, put the pressure cooker lid on, and once it reaches pressure, cook for 25 minutes.
