Falafel salad

PREPARATION
- We start by preparing the falafel. To do this, soak the chickpeas for 24 hours.
- Blend the chickpeas with the remaining ingredients. You can add a few tablespoons of chickpea flour or oats if the mixture is too runny.
- Form into balls and bake for 30 minutes at 180ºC (350ºF) along with a piece of sweet potato, which we'll use for the salad.
- For the sauce, mix all the ingredients well.
- Assemble your salad: add a base of lettuce, tomato, sweet potato, and 3 falafel balls. Add the sauce on top.
*Freeze any leftover falafel. Before baking, add 1 tablespoon of plant-based yogurt and a squeeze of lemon juice.
