Meatballs in carrot sauce

PREPARATION
- Sear the meatballs and set aside.
- Chop the garlic and sauté it with the finely chopped onion and carrots.
- When they are softened, add the chopped apple.
- Stir in the curry powder and stock. Let it simmer until the vegetables are tender.
- Blend everything well, add the meatballs, and cook for another 10 minutes.
*If you are making the meatballs with textured soy protein, hydrate the soy in soy sauce and water, drain, and blend it with flax seeds and a few tablespoons of oats. Form the meatballs and sear them.
